Isomaltulose is white crystalline powder, odourless and sweet. It is a natural sugar found in sugarcane and honey. The sweetness of isomaltulose is about 42% that of sucrose. It has a pure sweetness that is similar to the sucrose without bad taste during and after being eaten.

Isomaltulose has many advantages, like, acid resistance, heat resistance, not easy hydrolysis. It can be digested at small intestine and completely absorbed by intestinal villi.
